Curried Apple Slaw Runner's World, Rodale, publishes a bunch of magazines that feature recipes, as well as a good number of cookbooks. So, it makes sense that we'd have a Test Kitchen, where the recipes get made, altered, and remade until they're delicious.
As mentioned in yesterday's post, I had a large bottle of apple juice (minus two tablespoons) left over after a recipe, and the Test Kitchen came up with three other uses for it. The first: Health - Injuries from One Ingredient, Three Ways: Curried Apple Slaw.
The spicy-sweet flavor from the apples and curry powder elevates this recipe above traditional coleslaw. The apples, along with the raisins, break up the cabbage crunch with some softer textures. It pairs amazingly with sloppy joes (tomorrow's recipe!), and it's another great option to bring to summer gatherings.

Recipe from One Ingredient, Three Ways: Curried Apple Slaw
What you'll need:

3/4 Curried Apple Slaw
2 In a separate bowl, combine the mayonnaise, apple juice, curry powder, salt, and pepper
2 scallions, chopped
1/4 cups shredded green cabbage
1/2 cup mayonnaise
3 Curried Apple Slaw
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
How to Start Running:
1. teaspoon curry powder.
2. In a separate bowl, combine the mayonnaise, apple juice, curry powder, salt, and pepper.
3. Add the mayo mixture to the cabbage mixture and combine well. Let stand 10 minutes before serving. Serves 4.
