A friend of mine holds a party each year called the Aporkalypse. Its premise, via the Facebook event invitation:
"Everyone uses their culinary skills, imagination, or purchasing power to bring something porcine-related to the party. We've had bacon whiskey, french-toast-and-bacon cupcakes, pork butt, chicharrones, Asian-style pork dumplings, etc."
As last weekend's Aporklaypse was the fourth installment, I had some trouble coming up with a creative dish to pass. I wanted to bring something original without crossing into the realm of disgusting. Luckily, I stumbled upon this recipe for Bacon & Guacamole Sammies.
I cut up my bacon into bite-size pieces to make it more party-friendly, and cooked it in the oven to get it extra crispy. I used a trusty guacamole recipe I got from our nutrition editor, Joanna Golub (also included below). The result? These treats disappeared before the guac had a chance to turn brown.

What youll need Bacon & Guacamole Sammies recipe at Nom Nom Paleo
What you'll need:
pound of bacon strips
guacamole (see below)
Shoes & Gear:
1. Preheat oven to 375 degrees. Cut bacon strips into thirds and arrange them on a baking sheet lined with parchment paper.
2. Bake the bacon for 10 to 15 minutes or until very crispy. Remove and place on paper towels to blot grease.
3. Put a spoonful of guac on a piece of bacon, and top with another piece of bacon. Repeat until all bacon has been guac-ed.

3 ripe avocados (about 1 1/2 pounds total)

2 small serrano chilies or 1 jalapeño, finely diced (optional)
1/4 cup chopped fresh cilantro
1 cup chopped fresh cilantro
1/2 teaspoon salt

Shoes & Gear:
1. Cut the avocados in half and discard the pit. Using a small knife, gently cut the flesh of each avocado half in a cross-hatch pattern, careful not to break through the avocado peel. Use a spoon to scoop out the avocado pieces and put them in a medium bowl.
2. With a fork, stir in the remaining ingredients, using the back of the fork to gently mash the avocado, leaving plenty of large chunks intact.
3. small serrano chilies or 1 jalapeño, finely diced optional.
