The recipe is deceiving—despite containing cheese, sour cream, and beer, the finished product is much lighter than you'd expect, and the rosemary adds some fresh notes.
If you're hoping to load up on veggies this week to atone for your St. Paddy's Day sins, they'll taste lots better dipped in this.
Stout Cheese Dip

What you'll need:
2 cups shredded sharp Cheddar (reduced-fat or full fat)
1 teaspoon prepared horseradish
2 scallions, sliced
2 teaspoons grainy mustard

1/4 tsp salt (plus more to taste)

1/4 cup stout or dark beer (such as Guinness)

teaspoon prepared horseradish:
1. Place the sharp Cheddar, shallot, scallions, grainy mustard, prepared horseradish, rosemary, and salt in a food processor, and pulse several times to combine.
2. Add the sour cream and beer; blend until smooth. If it's too thick, add a bit more beer. If it's too thin, add more cheese. Salt and pepper to taste.
